Illinois Senate Passes Bill Requiring Celiac Disease Training for Food Handlers

SPRINGFIELD – A proposal to protect Illinois food service consumers with celiac disease has passed the Senate. The legislation would require licensed food handlers to receive training on the symptoms of celiac disease, how to prevent cross-contamination with gluten-containing foods, and proper cleaning and sanitizing procedures. Even small traces of gluten can cause serious health problems for people with the condition.
